- Drain the tofu and cut it into small triangles. I cut the block into 8 rectangles, then cut each rectangle in half to make 2 squares per rectangle. I cut each square diagonally so that each square has four triangles.
- Heat a cast iron or nonstick skillet over medium heat. A 10-inch pan holds all the tofu. So if you're using a smaller pan, you'll need to do this in batches. To "fry" tofu properly, you need a pan that won't stick tofu without oil.
- Spread the tofu in a single layer in the pan. Press the tofu with a spoon. The liquid will thicken and cook, and the tofu will turn golden. The more water that evaporates, the firmer the tofu will be, so be careful not to break the tofu at first. After a few minutes, flip the tofu and press the other side. After dry roasting for about 10 minutes, you can turn off the heat and set the tofu aside to cook later or continue adding the sauce.
