- 2 pounds Velvet Cheese Brick
- 3 Mexican cheeses (garnish - optional)
- For hard vegetables
- 1/4 cup green bell pepper (finely chopped + save for garnish)
- 1/4 cup red bell pepper (finely chopped + save for garnish)
- 1/4 cup yellow bell pepper (finely chopped + save for garnish)
- 1/4 cup orange chile (finely chopped + save for garnish)
- 1/4 cup onions (finely chopped + save for garnish)
- 1/4 cup Viadala sweet onion (finely chopped + seasoned)
- 1/4 cup Jalapenos (finely chopped + for garnish)
- 1 teaspoon garlic (finely chopped)
- Herbs and spices for tender vegetables
- 1/2 cup green bell pepper (seedless - peeled and chopped)
- 1 tablespoon grated cumin
- 1/2 teaspoon Mexican oregano (small)
- 1/4 teaspoon fresh black pepper
- 1/2 cup fresh leaves (chopped + save for garnish)
- 1/4 teaspoon cayenne pepper
- 1 (10 oz) ROTELL tomatoes (completely dry and paper towel-dried)
- 4 tablespoons of quality Mexican beer
- For protein
- 2 cans of fagli pepper cone [your favorite brand]
- For sides and decoration
- Fresh green pepper taste
- Regular tortilla chips or firm lemon as needed

- Cut the vegetables well.

- Place any tough vegetables in a microwave-safe lid, letting them soften. [For example, ROTELL tomatoes, roasted peppers, and fresh cylinders]

- Add 4 tablespoons of quality Mexican beer to strong greens. Heat for 3 minutes. Cover the bowl tightly for 5 minutes to steam and puree the vegetables. Drain any excess liquid before adding to the cheese mixture.

- Cut room temperature cheese into 1-inch cubes.

- Add everything to your cheese except the fresh cilantro.

- Sprinkle your fresh salsa with chilled chopped cilantro, colored peppers, jalapenos, 3 Mexican cheeses, and red, white, and green onions. Make sure the tortilla chips are firm and thick, as this is a tough, sticky sauce. Frozen Mexican beer goes great with this dish. Have a good time!
